Trasferite il guanciale in una ciotolina e tenerlo da parte.

Scolare la pasta al dente direttamente nella padella con il fondo di cottura.

Togliere dal fuoco e versare il composto di uova e Pecorino romano nella padella, mescolare velocemente per amalgamare.

Remove from heat and pour the egg and Pecorino Romano mixture into the pan, stir quickly to combine.

Per rendere la pasta ben cremosa, al bisogno aggiungere poca acqua di cottura dalla pasta.

To make the pasta creamy, if necessary add a little cooking water from the pasta.

Aggiungere il guanciale e mescolare.

Add guanciale and mix.

Servire subito aggiungendo ancora del Pecorino romano e un pizzico si pepe nero.

Serve immediately adding more Roman Pecorino and a pinch of black pepper.
