Tagliatelle with rocket pesto and shrimps

ingredients for 1 person

 

Rocket 100 g
Extra virgin olive oil 150 gr
Pine nuts 50 g
Walnuts 50 g
Grana Padano PDO to grate 50 gr
Pecorino cheese 50 g
Garlic 1 clove
Salt up to taste
Fine pepper to taste
Shrimps 100 g
Tagliatelle 80 g

Tagliatelle with rocket pesto and prawns

Recipe

Put a pot of salted water on the fire to cook the pasta.

Wash the rocket, dry it and put it in a container

add the pine nuts

the walnuts

the Grana Padano

pecorino romano

add the whole peeled garlic clove

salt and olive oil

mix well

Start blending everything at low speed and gradually add the remaining olive oil slowly until you get a well blended and fluid cream

add the tagliatelle when the water in the pan has boiled

Heat some olive oil in a pan

add the prawns and some pepper

drain the pasta while it is still al dente and pour it into the pan with the prawns

leave to cook for about a minute

add the rocket pesto and stir it into the pan on low heat for about 30 seconds

soften it by mixing it with a few tablespoons of cooking water

plate up and serve

the dish should be accompanied with a white wine
